Northeast Kingdom Council on Aging - Nutrition Consultant and Registered Dietitian
What motivated you to live and work in Vermont? My motivation to live and work in Vermont was when I first met my husband, Erik Armstrong. (I lived and worked in New Hampshire at the time). Rik grew up in Lyndonville, and is a 4th generation Mason who has extreme pride for his trade and enjoys working with his family. We wanted to be close to friends and family, live in a supportive and thriving community, and work with purpose. We are fortunate to call the Northeast Kingdom of Vermont (NEK) our home.
Favorite part of your job? My favorite part of my job is inspiring and leading others to learn more about diabetes education and diabetes management. I’m currently developing and leading an innovative, comprehensive, and sustainable diabetes and nutrition program at Northern Counties Health Care, Inc.
Most inspiring mentor and why: I am drawn to community leaders and people who make an impact. I find it fascinating to learn and hear stories about how people built their lives and careers.
Tell us something fun about yourself that few people know: Few people know that my husband and I spend 6 minutes together first thing in the morning, every morning. We sit quietly on yoga mats and meditation cushions with one minute in each category: silence, affirmations, visualization, journaling, reading, and exercising. Starting our day with positivity and gratitude is powerful.
Favorite Vermont escape: My favorite Vermont escape is the view on Darling Hill Road in Lyndonville. My husband and I love the food and the view from Juniper’s Restaurant, at the Wildflower Inn. Vermont mountain views are gorgeous no matter what season it is.
Favorite downtime activity: My favorite downtime activity is fishing! I love all types of fishing, but especially enjoy catching a fish from a kayak! I look forward to early morning fly fishing trips with my dad, and now my husband is hooked too!
Person you would most like to share a Vermont beverage with: The person I’d most like to share a Vermont beverage with is my boss, Kari White. She inspires me with her passion and leadership.
If you had unlimited access to funds, which cause(s) would you support: The cause I would support with unlimited funds is No Kid Hungry. As a Registered Dietitian I am especially drawn to their commitment to nutrition and cooking education and their advocacy work with connecting children to healthy meals.
Where do you see yourself professionally in the next 5-10 years? In the next 5-10 years, professionally I hope to attend the Vermont Leadership Institute at the Snelling Center for Government to continue growing within the health care industry. My husband and I also enjoy being property owners and landlords. Our goal is to continue to seek opportunities to provide safe, clean apartments for renters in the NEK of Vermont.
